Khanom Kluay
This is one of them. A kind of mashed banana mixed with flour and coconut milk. This is placed into banana leaf cups and shredded coconut is put on top. This is then steamed for about 10 minutes. These only cost two baht each.
Ingredients
2 Cups Rice Flour
1½ Tapioca Flour
1 Cup Scraped Young Coconut
2½ Cups Coconut Milk
2 Cups Mashed Banana (1 kg)
2 Cups Sugar
2 Teaspoon Salt For the topping:
3 Cups Scraped Coconut
1 Teaspoon Salt
2 Cups Rice Flour
1½ Tapioca Flour
1 Cup Scraped Young Coconut
2½ Cups Coconut Milk
2 Cups Mashed Banana (1 kg)
2 Cups Sugar
2 Teaspoon Salt For the topping:
3 Cups Scraped Coconut
1 Teaspoon Salt
Banana Leaves Method
Mix the two kinds of flour together. Add the coconut milk while you knead the mixture.
Then add the salt and the mashed banana. Knead it well together.
Prepare the topping my mixing the scraped coconut and salt together.
Put the original mixture in tray lined with foil and steam it for twenty minutes.
Let it cool down in a fridge.
Before serving decorate with the topping and slices of banana.
